Taqueria Los Parados is a Tacos restaurant in Mexico City (Roma Sur), $$; open Mon–Fri 12:30–03:00; Sat 12:30–04:00; Sun 12:30–01:00.
Since 1965-Roma Sur standing-room taqueria where the charcoal grill is the entire point. A Roma Sur institution running since 1965, Los Parados ('The Standing Ones') earns its name: no chairs, just metal shelving for tables and a queue that moves fast. Everything grilled over charcoal and cooked to order-the bistec comes medium-well with subtle smoke, razor-thin costilla well-done, and the al pastor carved from a 30kg trompo. The specialty machitos de carnero (finely chopped goat tripe) and tacos de chile poblano con queso both have fierce defenders. Don't miss the arroz con leche. Cash and credit cards accepted (except American Express). Taqueria Los Parados is listed in the 2026 Michelin Guide, a six-decade-old standing-only Roma Sur taqueria known for charcoal-grilled meats and the less common machitos de carnero (chopped goat tripe) alongside its tacos.
